Mini Muffins – Banana Bread

Critch in the Kitch
3-4 ripe bananas
½ cup sugar
½ cup Stevia in the raw (for baking)
1/3 c. egg whites
¼ c. yogurt butter (I use Brummel & Brown)
¼ c. coconut oil
2 cups whole-wheat flour
1 tsp baking soda
¼ tsp cinnamon
¼ tsp salt
Pre-heat oven to 350; Mix together: bananas, sugars, egg
whites, yogurt butter & coconut oil. Add whole-wheat flour, soda, cinnamon
& salt.
Using cookie scoop – drop into greased (or Pam sprayed) mini
muffin tins.
Bake for 12-15 min.
